How we do it

Precision Fermentation

Kombucha is a natural fermentation where yeast creates alcohol and bacteria convert it into acidity. Most kombucha contains 0.5–0.8% alcohol, but reaching 0.0% requires a more refined process.
We use precision fermentation, carefully guiding cultures to transform even trace alcohol into acidity for a clean, balanced result. To preserve quality and organic standards, we gently pasteurize, ensuring stability without a constant cold chain.

Sommelier Collection

Built on our kombucha expertise, we combine our kombucha with high-tannic teas and carefully selected Nordic juices to create a more structured expression. This adds body and length while preserving aromatic complexity — making it ideal for gastronomic pairing.
In this sense, it moves beyond traditional kombucha, acting more as a proxy — a non-alcoholic counterpart to wine.

From Summerhaze as apéritif, to Bloom & Brew and Silent Shore for the opening courses, and Nordic Grove for the main — each expression is offered in either sparkling or still, ensuring the perfect pairing for every dish.

Each cuvée is composed with a gastronomic approach — built on fine teas, controlled fermentation, and carefully selected Nordic botanicals.
Across the collection, ingredients such as White Monkey, Sencha, Gyokuro, and Pu-erh provide structure and tannin, while botanicals like elderflower, chamomile, sea buckthorn, and aronia bring aromatic precision and depth.
The result is a progression from lifted and floral to structured and profound — designed to move seamlessly through a menu.
