København Kombucha is a family-owned company founded in 2019 by Louise, with the mentorship of Francis Cardenau and the Foodspace accelerator program. Our first products were awarded the Sol over Gudhjem Prize in Denmark, and production was established in Nordhavn, Copenhagen.

In 2023, Nicolas Limbach joined the company and now leads the business. As we began exporting and experienced rapid growth, we required access to automated champagne bottling lines—capabilities not available in Denmark. Production has since been moved to specialized partners in Germany.
