Finally!
After a lot of hard work and a successful crowdfunding, we have finally launched our Bee Pollen product with 0,0% Alcohol. This variant has been one of the most successful variants with fine dining restaurants. We still work with Peter Sjøgren our organic beekeeper from the North of Denmark. We decided to make this variant a bit drier than the other 2, so that we now can also pair with fish and seafood. Our first customer is a Danish 3 star Michelin restaurant, so we hope you will like it. Below you will find our tasting notes and pairing recommendations.
Pairing
With its bright acidity and mineral notes, Bee Pollen is the ideal companion for seafood and aromatic vegetables like fennel and celery. Imagine seafood, such as grilled scallops, paired with a Beurre Blanc sauce infused with Bee Pollen. The Bee Pollen perfectly balances the sweetness of caramelized fennel or celery. All our variants also work well as apéritif.
Tasting notes
Color: Straw yellow with beautiful mousse
Nose: Light acidity with lovely citrus nuances of ripe Amalfi lemons—without the sharp overly fresh lemon punch. Subtle notes of Bee Pollen with hints of white Mirabelle blossoms that bring liveliness to the nose.
